Juice of half a lemon
1 tsp fresh ginger root, peeled and minced
1 tbsp canola oil

Directions

Arrange romaine lettuce on two plates. Top with salmon, tomatoes, radishes, carrots, and cucumber.

Shake lemon juice, canola oil, and minced ginger in tightly covered jar. Pour over salad.

Zucchini Tart

Ingredients

600 g zucchini

3 eggs

10 cl soy cream

80 g semolina

Salt, pepper, herbs de Provence, basil.

Directions

Cut zucchini into slices or cubes, fry in a nonstick pan, seasoning well and adding a little water if needed (10-15 minutes).

Preheat oven to 180 ° C.

Cook the semolina in the volume of salt water required. Then mix with the zucchini.

Directions

In a stock pot, cook onion in olive oil over medium heat for 4-5 minutes until soft.

Add vegetable broth and bring to a boil. Reduce to a simmer and add celery and carrots along with broccoli florets. Cover and let simmer until carrots and broccoli florets are tender.

Add cooked barley, canned tomatoes, garlic, marjoram, and thyme. Let simmer another minute or two.

Season with salt and pepper. Serve warm.

Oat and Buckwheat Muesli

Ingredients

1 1/2 cups rolled oats

1/2 cup puffed buckwheat

1/2 cup dried apples, chopped

2 tsp ground cinnamon

1 cup organic pears, diced

1 cup red grapes, halved

3 tbsp brown sugar

Rice milk to serve

Directions

Preheat oven to 325°F (160°C, gas 3).

Spread oats evenly onto a non-stick baking tray and toast in preheated oven for about 10 minutes, stirring occasionally. Watch oats very closely when toasting as they can burn easily.

Remove from oven and let cool. Pour into a large ceramic or glass bowl and add water. Let soak in a refrigerator overnight.

Add puffed buckwheat, dried apples, cinnamon, and brown sugar to soaked oats. Stir well.

Divide mixture into serving bowls and top with pears and grapes. Serve with rice milk.
