Edamame and Ginger Dip

Edamame

Ingredients:

8 Ounces Frozen Shelled Edamame

1 Clove Garlic

¼ Cup Water

2 Tablespoons Reduced-Sodium Soy Sauce

1 Tablespoon Minced Ginger (Fresh)

1 Tablespoon rice vinegar

1 Tablespoon Tahini

1/8 Teaspoon Salt

Hot pepper sauce for added kick

Prep:

Boil edamame per the directions and remove the cooked edamame from the shell. Mash or puree the cooked edamame then puree additional ingredients until blended well. Chill in the refrigerator for 1 hour before serving. Enjoy for up to 5 days as long as kept refrigerated. Use pita chips, whole wheat tortilla chips, or your favorite veggies to dip!
