Linguine w/ Ham, Lemon, & Basil

Linguine

Ingredients:

1 pound of whole wheat linguine

¼ pound of prosciutto

2 Tablespoons Olive Oil

1 fresh lemon

2 egg yolks

3 Tablespoons of crème

1 large handful of fresh basil leaves

½ cup parmesan cheese, add more if desired

Prep:

Boil water and add linguine to the pot. Cook pasta for about 8 minutes or until tender. While pasta is cooking, warm a sautee pan on medium heat and add olive oil to it. Once warm, add torn pieces of prosciutto and cook until golden.

Drain the pasta when it’s ready, saving a little bit of the boiled water in the pan. Pour pasta back in the pot and toss in the golden prosciutto. In a separate bowl, mix the lemon juice from the whole lemon, egg yolks, and crème then toss into the pasta and prosciutto pot and mix together. Then add in the basil leaves and parmesan. Feel free to add more parmesan on top of your mixed pasta goodness. Serve and enjoy!
